Appetizer

Cheerios Nuggets

Ingredients
  

  • 1 cup brown sugar
  • 1/2 cup margarine
  • 1/4 cup light corn syrup
  • 1/2 tsp salt
  • 1/2 tps baking soda
  • 6 cups cheerios
  • 1 cup salted peanuts
  • 1 cup raisens
  • 1 cup m&m candies

Instructions
 

  • Heat Oven to 250 degrees
  • greese 9x13 pan
  • Heat brown sugar, margarine, corn syrup , and salt in 2 quart saucepan over medium heat
  • Cook, uncovered, stirring occasionally, for 2 minutes longer.
  • Remove from heat, stir in baking soda until foamy and light colored.
  • Pour over cheerios, peanuts, raisins, and M&Ms in 4 quart bowl
  • Stir until mixture is coated and spread evenly in pans
  • Bake for 15 minutes.
  • Stir, let stand until cool, about 10 minutes
  • Loosen mixture with metal spatula and let stand until firm, about 30 minutes
  • Break into bite-size pieces

Pico

Ingredients
  

  • 4 Roma tomatoes deseeded and diced
  • 2/3 cup white onion
  • 1 bunch cilantro finely chopped
  • 1 serrano pepper or jalapeño finely chopped
  • 1 lime juiced
  • 1/2 tsp salt

Instructions
 

  • Combine all ingredients, mix thoroughly
  • Wait 15mins before serving to allow ingredients to meld together

Ingredients
  

  • 1 english muffin
  • 1 sausage patty (precooked)
  • 1 egg egg
  • 1 tsp butter spread
  • 1 slice american cheese slice

Instructions
 

  • Cut english muffin in half, start in toaster
  • Preheat cast iron pan on medium heat
  • Place sausage patty on cast iron to heat
  • Cook egg in ring mold, break yoke
  • Reheat Bacon in microwave
  • Butter english muffins, add cheese, top with sausage patty
  • top with cooked egg and bacon

Main Dish

Mexican Casserole

Ingredients
  

  • 1 lb ground beef
  • 1 small onion, diced finely
  • 1 clove garlic, minced
  • 1 4oz can Old El Paso diced green chiles
  • 1 1oz package Old El Paso taco seasoning mix
  • 1 15oz can black beans, rinsed and drained
  • 1 12oz package frozen corn
  • 3 cups shredded Mexican blend cheese
  • 1 28 oz package frozen tater tots
  • 1 10oz can Old El Paso red enchilada sauc
  • 1 can olives
  • 1 bunch cilantro finely chopped
  • sour cream (for topping)
  • 1 roma tomatoe diced

Instructions
 

  • Preheat oven to 375 degrees and spray a 9x13 baking dish with cooking spray.
  • Bake tatertots in oven while cooking beef
  • In a large skillet, brown the beef and the onion. Add the garlic towards the end of the browning process and cook for 1 minute. Drain
  • Add the green chiles, taco seasoning mix, black beans, corn, and 2 cups of the cheese. Stir together to combine. If your skillet isn’t big enough you may need to stir it together in a bowl.
  • Pour mixture into the prepared 9x13 pan. Arrange tater tots on top of the mixture in a single layer.
  • Pour the enchilada sauce on top of the casserole as evenly as you can.
  • Bake uncovered for 30-40 minutes or until tater tots are nice and crispy. Sprinkle the remaining 1 cup of cheese on top and place back in the oven for 2-3 minutes or until cheese has melted.
  • Top with olives, cilantro, sour cream, tomatoes when serving if desired.

Nana's Turkey Cassarole

Ingredients
  

  • 2 cups Crushed Potato Chips
  • 4 cups Egg noodles
  • 2 cups diced Turkey, Chicken, beef or pork
  • 1 cup diced celery
  • 3 Chopped green onion
  • 1 can mushroom soup
  • 1/2 cup water (or stock)
  • 1 cup grated cheese

Instructions
 

  • Combine meat, celery and onions
  • Place half of mixture in 1 1/2 quart casserole dish
  • Spoon 1/2 can soup and 1/4 cup water over meat mixture
  • Sprinkle with half the cheese and 1 cup of potato chips
  • Continue layering in same order
  • Bake uncovered at 350 degree over 25 to 30 minutes

Tatertot Casserole

  • 9x13 dish
  • Large Frying Pan
  • Medium Frying Pan

Ingredients
  

  • 2 tbsp butter
  • 1 half onion
  • 6 oz mushrooms
  • 1 can Mushroom soup
  • .5 cup milk
  • 1 can greenbeans
  • 1 lb Hamburger
  • .5 cup cheddar cheese (shredded)
  • 16 oz Tatertots

Instructions
 

  • Preheat oven to 350 degrees
  • Place tatertots on baking sheet, place in oven for 10 minutes
  • In large pan melt butter and sauté onion and mushrooms, salt and pepper
  • Add Mushroom soup and milk, heat until well mixed
  • In a second frying pan, crumble hamburger, salt and pepper, cook till brown
  • Place green beans in bottom of baking dish
  • Add cooked hamburger to baking dish
  • Add Mushroom soup / onion mixture to baking dish, covering hamburger evenly
  • Add shredded cheddar cheese on top of mushroom soup mix
  • Place tatertots evenly on top of cheddar cheese
  • Cover with tin foil and Bake for 40 minutes
  • Remove foil, let stand 5-10 minutes

Ingredients
  

  • 1 package ramen noodles
  • 1 package noodle flavoring
  • 1 tbsp soy sauce
  • 2 tbsp chunky peanut butter
  • 2 tps sriracha sauce
  • 1/2 stock green onion thinly sliced

Instructions
 

  • Boil Noodles with flavor packet
  • Drain liquid, saving half of a cup
  • Mix Soy sauce, peanut butter and sriracha
  • Toss noodles with soy sauce, peanut & sriracha mix
  • Top with green onion

  • Stainless 6-quart saucepot with lid
  • Digital candy thermometer
  • Wooden corner spoon
  • Wax Paper
  • 12x15x3 sheet cake pan

Ingredients
  

  • 2 cups white sugar
  • 1 cup brown sugar
  • 1 cup evaporated milk
  • 1 pint heavy whipping cream
  • 1 cup butter
  • 1 1/4 tsp vanilla extract

Instructions
 

  • Combine everything except vanilla, stirring occasionally
  • Remove from heat when mixture reaches 245 degrees
  • Stir in Vanilla then transfer to greased 12x15 pan
  • Let mixture cool completely
  • Once cooled, cut into small squares and wrap them in wax paper, store in airtight container

Rolo Pretzel Bits

Ingredients
  

  • Square pretzels
  • Rolos
  • White Chocolate
  • Sprinkles or M&M's (Optional)

Instructions
 

  • Preheat oven to 250°F and add 25 pretzels on a foil lined baking sheet. Then place one Rolo candy on top of each pretzel
  • Bake for 3 minutes, until Rolos have softened.
  • Remove from oven and place another pretzel on top of each Rolo to form a sandwich. You can also top with a M&M or pecan instead. Let cool completely.
  • If you made the sandwich and want to dip them, add white chocolate to microwave safe bowl and cook at 50% power for 1 minute, then stir. Heat in 30 second intervals until melted (stirring in between).
  • Dip half of pretzel sandwich into melted chocolate. Let excess chocolate run off, then return to the baking sheet. Sprinkle with holiday sprinkles.
  • Allow rolo pretzels to cool completely before serving. Enjoy!
